Side Dish Recipes
• 2 teaspoons vegetable oil
• 2-3 cloves garlic, minced
• 1/2 teaspoon sea salt
• 2 (10-oz.) packages fresh spinach (about 20 cups)
• 1 tablespoon seasoned rice vinegar
1. Heat the oil in a Chef’s pan or Dutch oven over medium-high heat.
2. Add garlic, salt, and one package (or 10 cups) of spinach, sauté 1 minute or until spinach wilts. Add remaining spinach, and cook 2 minutes or until the spinach wilts, stirring frequently.
3. Remove from heat, toss with rice vinegar.
Makes 4 servings.

Comments: This spinach side dish is easy to prepare and quick to cook. I often fix it with fish or chicken, and I usually use olive oil rather than vegetable oil. It is easy to cut in half when I’m cooking for just the two of us. Cooking the spinach creates quite a bit of steam, so it is best to open some ports while this cooks.
